Tabi is the one coffee here that wasn't a happy accident. Cenicafé, Colombia's national coffee research center, crossed Typica, Bourbon and Timor Hybrid and released it in 2002 — rust resistance from the Timor side, cup quality from the other two. They named it Tabi, which means "good" in Guambiano.

Black honey is the slowest of the honey processes, and the riskiest. The skin comes off, most of the mucilage stays on, and the bean dries with it — often in shade, often for twice as long as a lighter honey. More days on the drying bed means more chances for the fermentation to go somewhere nobody wanted. Done right, it's the one that lands sweetest and fullest.
