How to Brew Your Drip Bag
Many hands carried this coffee a long way. The last three minutes are yours.
Before you start
Water just off the boil, around 194°F / 90°C. No thermometer? Boil it and wait a minute and a half.
A tall mug, not a wide one. The bottom of the filter shouldn't sit in the coffee you've already brewed.
No scale needed. The whole thing takes about three minutes.
Three steps
1. Shake it, then tear off the top:
Coffee settles on the way here. A few taps evens it out. Then tear along the dotted line.
2. Hook it on your mug and flatten the bed:
Pull the two ears open and hang them over the rim. Give it one last tap so the coffee sits flat. If the bed is uneven, the water finds a shortcut down one side, and you get a thin cup.
3. Fill it to the top. Three times:
Pour until the water reaches the top of the filter, then stop. Wait about 30 seconds, or just watch and pour again once it's drained through. Do that three times total.
When it stops dripping, lift it out by the ears and toss it. That's your cup.
If it didn't come out right
Sour or thin? Your water was too cool, or it drained too fast. Use hotter water and pour more slowly.
Bitter, with a dry finish? It sat too long. Don't wait as long between fills.
If you brew with a scale
14 g of coffee, 188–200 g of water at 90°C, 2:30 to 3:10 total. That's roughly 1:14 — a little tighter than a standard pour over, on purpose. The lower temperature keeps the acidity from running sharp, and the shorter ratio makes up for the slower extraction.
