The name is a mistake that stuck. A Colombian farmer found a plant with pink cherries growing among his Bourbon trees and assumed it had to be a cross between his red ones and his yellow ones. Café Imports ran genetic testing twice, in 2017 and again in 2023, and found it isn't a Bourbon at all but an Ethiopian landrace. They were careful to add that the match isn't exact and the work hasn't been peer-reviewed. The name stayed regardless.
William Ferney Ortiz Ruiz grows it at La Cabaña, in Bruselas, Huila, the same department where the variety first turned up, around 2014. Natural process: the cherry dries whole, which is where naturals get their fruit-forward, wine like character. Pineapple, rose wine, white chocolate, brown sugar.
