Chiroso was first identified in Urrao, in Antioquia. For years, the assumption was that it had to be a mutation of Caturra, hence "Caturra Chiroso," the name you still see on some bags. Genetic testing has pointed somewhere else entirely: the lineage appears to run back to Ethiopian landraces. The work isn't fully settled, and nobody has worked out how the variety got to Colombia in the first place.
Buyers who know it tend to compare Chiroso to Gesha for the florals, but describe it as more herbal, with more sweetness and more body. Ariel Urbano grows his at 1,900 meters on La Loma, in La Unión, Nariño, a long way from where the variety was first found. Natural process: the cherry dries whole on the bean, skin and all. It takes the longest of the standard methods and leaves the least room for error.
