The Culturing process is something different. During fermentation, real fruit, in this case, watermelon, is introduced directly into the process alongside the coffee cherries. The beans absorb the fruit's compounds during fermentation before drying, transferring flavor in a way that no artificial flavoring could replicate. It starts in the fruit. It ends in your cup.
